Artichoke & Spinach Baked Brie
One of my favorite entertaining (or really everyday) side dishes. Perfect for entertaining and holiday get togethers. This savory brie makes a great addition to the dinner table or an appetizer throughout the day!

Serves 4
8oz circle of brie
1 bundle scallion green onions
1 cup finely chopped spinach
8-16oz of chopped artichoke hearts (amount based on preference)
1/4 cup artichoke juice
**optional: 1/2 cup chopped mushrooms

Cut brie into 6 slices and put on bottom of plate

Mix sliced artichoke hearts, green onions, spinach & mushrooms** in bowl. Add in artichoke juice, salt & pepper and let it sit for 5 minutes. Place over the brie in serving plate.
Place in 300 degree pre-heated oven for 5-10 minutes (make sure brie doesn’t melt completely).

Serve with baguette slices or favorite sliced bread. Enjoy!
