Avocado Grapefruit Salad with Pesto Dressing

Just in case you weren’t aware – I’m currently obsessed with Queer Eye on Netflix! It’s honestly the best show to binge watch again and again. In one episode, Antoni showed how to make an avocado grapefruit salad – which blew my mind and knew I had to try it myself. He made his with a vinaigrette and honestly I’m not a fan of them so instead of making that, I just made a pesto dressing. Here’s the avocado, grapefruit salad with pesto dressing inspired by Antoni from Queer Eye! ??

What you need:

1 whole Avocado
1 whole grapefruit

For Dressing

1 tbsp olive oil
4 tbsp Pesto (I bought some from whole foods – you do you though)
1/2 tbsp lime juice

What you do:

  • Slice the avocado into strips. Do this by cutting avocado in half first, then using a spoon, gently scoop out avocado, then cut into slices. 
  • Slice grapefruit into wedges. Do this by cutting skin off first with knife, then slowly cutting in between the layers and gently removing each wedge.
  • Place the cut grapefruit and avocado on a plate.
  • Mix the pesto, olive oil & lime juice in bowl. Then add on top of salad. I did not make this pesto myself and simply bought it from Whole Foods. 
  • Enjoy!!
